Slow cooked lamb for Father's Day

This is a very easy but amazingly delicious recipe which we cook often! It is is one of Warwick's favourite meals so we thought it was perfect to share with you before Father's Day.

1 whole shoulder of lamb (bone in)
2 x brown onions, sliced
6 x garlic cloves, sliced
1 large handful herbs (we love a mixture of thyme, oregano & rosemary).
½ cup olive oil
1 lemon cut into quarters
Salt flakes & pepper 

Preheat oven to 140 degrees Celsius. 

Combine onion, garlic, herbs, & olive oil; squeeze juice from the lemon quarters into the mix & then toss them in too; season with salt & pepper then give it all a good toss to combine.

Place onion mix in the bottom of a roasting pot with lid, big enough to fit the lamb; sit the lamb on top, drizzle some olive oil over & season with salt & pepper.

Put the lid on, make sure it is well sealed (if not, cover tightly with foil).

Place in oven & roast for 4-6 hours or until meat is very tender & comes away from the bone easily. Rest for 20 minutes before shredding meat from bone using 2 forks.

We love to serve this meat with mashed potatoes or crispy smashed potatoes & greens or a green salad!
